Chicken Meatballs Spinach Soup

If you bother of your diet and fasting days are ok for you, then this recipe will fit perfectly into your healthy menu. Our chicken meatballs spinach soup does not contain any potatoes, but combines a big amount of useful and dietary spinach, two types of fragrant greenery and gentle chicken meatballs, which are baked in an oven.

  • Vegetable oil
    30 ml
  • Carrot

  • Chicken broth
    2 l
  • Dill

    - to taste


Chicken Meatballs Spinach Soup


Steps

  • 1. Carefully wash the chicken meat – I use chicken thighs without bones for this dish. We have frozen spinach and it’s not necessary to unfreeze it. You can put frozen briquettes in soup. You can choose any kind of pasta, but it is better to choose something like cavatappi pasta. In advance peel onions, garlic, carrots and wash fragrant greenery. First of all pass several times (we have done it twice) chicken meat through mincing machine, so that mince becomes as gentle as possible.
  • 2. Transfer finely chopped parsley, the whole portion of crumbs and grated cheese into a bowl with mince.
  • 3. Immediately break an egg to these ingredients, add salt and pepper. Let's mix actively.
  • 4. Roll easily meatballs with wet hands, the diameter of which will not be more than 3 cm.
  • 5. Cover the baking sheet with baking paper and put all chicken meatballs for further baking in the oven: 30 minutes at 180 degrees.
  • 6. Cut carrots into small cubes.
  • 7. Fry carrots cubes a little (10 minutes) in pre-heated vegetable oil.
  • 8. Fill the pan with fresh broth, wait (only 4-5 minutes) when it will boil, add the carrots cubes and cook for 15 minutes.
  • 9. Put the whole portion of spinach (we have frozen briquettes).
  • 10. Immediately after this put chicken meatballs into the pan and cook for 5 minutes.
  • 11. Add pasta, cut or passed through press garlic, finely cut dill and continue to cook for another 15 minutes. Pour ready, very fragrant and delicious-looking soup into beautiful plates and serve immediately.
