Vegetable Stew with Mackerel

Usually, stew is prepared from seasonal vegetables with the addition of meat, poultry or mushrooms. Today I suggest you to try a new version of this dish with mackerel. Fish stew prepared according to this recipe has bright taste and unique aroma. In addition to potatoes and mackerel, for stew we will use tomatoes in its own juice, bell pepper, garlic, paprika and parsley. Such composition gives the dish a saturated piquant taste and delicious look. It is difficult to resist and not to eat all sauce from a plate with a slice of bread.

Ingredients

  • Mackerel

  • Potato
    4 pcs
  • Bell pepper
    1 pcs
  • Onion
    1 pcs
  • Garlic
    3 clove
  • Tomato
    300 g
  • Olive oil
    50 ml
  • Water
    500 ml
  • Paprika
    0.5 tsp
  • Bay leaf
    1 pcs
  • Allspice
    2-3 pcs
  • Parsley
    15 g
  • Salt
    - to taste



Steps

  • 1. Wash the fish and cut off the head, tail and fins. Pour the head and tail of the mackerel with cold water and cook for 20 minutes from the moment of boiling with the addition of bay leaf and black allspice.
  • 2. Turn on the "Fry" mode on the multicooker. Pour olive oil into the bowl of multicooker. When it heats up, add cut into halves garlic cloves and chopped parsley. Stir and fry the ingredients for 1 minute.
  • 3. Add tomatoes in own juice to the multicooker. Stir and cook the ingredients together for 3-5 minutes until the liquid thickens.
  • 4. Wash the potato, peel and cut largely.
  • 5. Add the ground potatoes to the multicooker bowl.
  • 6. Peel onions and cut into quarter rings. Wash the bell pepper, clean from seeds and cut into pieces of medium size.
  • 7. Next to the potatoes, add cut onions, bell pepper and smoked paprika to the multicooker bowl.
  • 8. Stir periodically and fry vegetables for 5 minutes.
  • 9. Pour to vegetables ready fish broth. The liquid should completely cover all ingredients. Close the lid of the multicooker and turn on the "Stew" mode for 30 minutes.
  • 10. Remove insides from the fish and cut mackerel into portion pieces with thickness of 2-3 cm.
  • 11. After 20 minutes, open the bowl of multicooker. Put pieces of mackerel on top of the vegetables.
  • 12. Add salt and black ground pepper to taste. Close the lid of the multicooker and continue to stew with fish for another 10 minutes until ready.
  • 13. Serve stew with mackerel and vegetables immediately after cooking or let the dish stay for 20 minutes in heating mode.
