Hedgehog Cookies

Let’s prepare delicious crispy «Hedgehog» cookies for dessert. Gentle crust dough, chocolate glaze and sesame seeds - what could be more delicious? The process of baking is interesting and at the same time very simple. You want a family of funny hedgehogs in your kitchen, too? Follow this step-by-step recipe and you'll make it work!

  • Whole wheat flour
    130 g
  • Butter
    85 g
  • Sour cream
    2 tbsp
  • Egg
    1 pcs
  • Sugar
    3 tbsp
  • Baking powder
    1 tsp
  • Cocoa powder
    1 tbsp
  • Powdered sugar
    2 tbsp
  • Milk
    2 tbsp
  • Salt

  • 1. Boil hard chicken egg, gently separate yolk from white. Ground boiled yolk on a small grater.
  • 2. Melt butter (60 g) in a microwave oven or on a cooking surface, cool to room temperature and add to boiled yolk.
  • 3. Then add sugar to the dough.
  • 4. Whip the mixture with the help of a mixer until a fluffy homogeneous mass is obtained. Add sour cream to the dough. Mix the mixture again with a mixer.
  • 5. Add baking powder and salt to the dough.
  • 6. In several steps let’s add sifted wheat flour into the dough, each time mixing the ingredients until homogeneous consistence.
  • 7. Knead soft elastic dough. Wrap it in a food wrap and send it to the fridge for 30 minutes.
  • 8. After the specified time let’s form 8 triangular preparations from dough. Put cookies at a distance from each other on a baking sheet lined with parchment paper.
  • 9. Send cookies to the oven pre-heated to 180 degrees for 12-15 minutes. During this time the pastry will significantly increase in size and redden.
  • 10. Cool down the ready cookies on the wire rack to room temperature. Meanwhile, let’s make chocolate icing. In a pan or small saucepan combine milk, cocoa and sugar powder. Mix the ingredients and put the saucepan on low fire.
  • 11. Stir constantly and bring the chocolate icing to a boil. Then add butter (25 g) to the icing, mix. Bring the icing to boiling again and after that remove it from the fire and cool it to thickening.
  • 12. Apply chocolate icing on cookies and decorate pastry with sesame seeds, imitating needles of hedgehogs. With the help of a toothpick, draw the hedgehogs’ eyes and nose. Leave the ready cookies for 15-20 minutes for chocolate icing to set completely.
