  • 1. Wash the chicken thigh, transfer to a pan and pour with two liters of cold water. Cover the pan with a lid and bring the broth to boiling. Remove the foam by skimming dish and cook the broth for 40 minutes after boiling.
  • 2. Remove meat from the ready chicken broth. Wash the potatoes, peel and cut with cubes. Add vegetables to the pickle soup with rice and pickled cucumbers, following the recipe.
  • 3. Then add carefully washed rice to the broth.
  • 4. Cut the smoked brisket with small cubes.
  • 5. Put the crushed brisket in a deep frying pan with a small amount of vegetable oil. Stir periodically and fry pieces of brisket on low fire until golden.
  • 6. Meanwhile, let’s prepare the vegetables. Peel onions, cut with small cubes. Wash carrots, peel and ground on a large grater.
  • 7. Add onions to the fried smoked brisket. Stir and continue to fry the ingredients together for a few more minutes.
  • 8. Then add grated carrots to the onion. Stir and continue to fry the ingredients together for 2-3 minutes.
  • 9. The pickle soup, which recipe I offer you, cannot be cooked without pickled cucumbers. Cut them into small cubes.
  • 10. When the vegetables in the frying pan become soft, let’s add crushed pickled cucumbers to them. Continue to fry the ingredients together on low fire.
  • 11. After a few minutes, add tomato paste to vegetables and brisket and pour in frying pan 2 ladles of broth from a pan. Stir periodically and stew the mixture on low fire for 5-7 minutes.
  • 12. When potatoes and rice are almost ready, add a mixture of vegetables and smoked brisket to the pickle soup.
  • 13. At the end of the preparation add salt, seasonings and finely chopped fresh greenery to the pickle soup. Let the soup boil again, and then turn off the fire.
