Today I suggest preparing a new recipe - stewed mackerel in tomato sauce. The fish is very gentle, soft and fragrant. The unique taste of mackerel in this recipe is given by a sauce prepared on the basis of a mixture of browned vegetables and sour-sweet tomato paste seasoned with spices. Mackerel hasn’t got many bones and it’s quite oily fish, so even fussy eaters will be satisfied.
2.Put the onions in a deep frying pan with pre-heated olive oil. Stir periodically and brown vegetables on low fire until golden.
3.Wash fresh tomatoes and cut with small cubes.
4.Add the ground tomatoes to the browned onions. Stir and continue to fry vegetables for 3 minutes.
5.Then add tomato paste to vegetables, mix.
6.Pour in the frying pan 200 ml of hot water. Add bay leaves, peas of black allspice, sugar, salt and spices to taste. Stir periodically and bring the sauce to boiling.
7.In advance unfreeze mackerel at room temperature. Wash the fish, cut off the head, tail and fins. Remove the insides and once again wash fish carefully. Cut the fish into portion pieces.
8.Salt mackerel pieces, season with fish spices and black ground pepper.
9.Put pieces of mackerel into boiling tomato sauce, cover the frying pan with a lid. In 25 minutes, the mackerel in the tomato will be ready.
10.In the process of cooking turn over the fish so that it prepares evenly.
