Easy Dumplings Soup

Today we will prepare a simple and fragrant soup with dumplings (the recipe with the photo is attached as always). This soup is a find for hostesses who need to feed the family with a hot lunch quickly and well. For the recipe it is best to use homemade dumplings made with chicken or pork-beef mince. But small soup dumplings from the store will also do. We will also need several potatoes, carrots, onions, fresh greenery and spices to prepare the soup. To make the dish more nutritious, soup with dumplings can be prepared on the basis of chicken or meat broth. If desired, a small slice of butter and a spoon of sour cream can be added to each portion of soup before serving.

Ingredients

  • Frozen dumplings
    150 g
  • Potato
    5 pcs
  • Carrot
    1 pcs
  • Onion
    1 pcs
  • Paprika
    0.25 tsp
  • Olive oil
    30 ml
  • Bay leaf
    1 pcs
  • Allspice
    3 pcs
  • Parsley
    - to taste
  • Green onion
    - to taste
  • Salt
    - to taste
  • Black pepper
    - to taste



Steps

  • 1. Wash the potatoes and peel. Cut vegetables into small pieces using a figure knife.
  • 2. Transfer the crushed potatoes to a deep pan and pour vegetables with two liters of cold water. Add half of the onion, green onions, parsley stems, bay leaf and black allspice to the pan. Cover the pan with a lid and bring the ingredients to a boil.
  • 3. After water boils let’s reduce the fire to a minimum and cook potatoes until semi-readiness. Meanwhile, cut the remaining half of the onion into small cubes.
  • 4. Wash carrots, peel and cut into small pieces, keep to the recipe of dumplings soup.
  • 5. Put the cut onions and carrots in a frying pan with pre-heated olive oil. Stir periodically and brown vegetables until a light golden brown.
  • 6. When the potatoes are cooked until semi-readiness, remove half of the onion, greenery and spices from the pan. Add browned vegetables to the broth, mix.
  • 7. When the broth boils again, let's add frozen dumplings into it. If you don’t have the time or energy to make pelmeni from scratch, no worries! You can easily find frozen pelmeni at any Eastern European supermarket.
  • 8. Cover the pan with soup with a lid and cook on low fire for 7-10 minutes. A few minutes before the end of preparation let’s add finely chopped parsley, salt and spices to the soup.
