Bulgur can be cooked in different ways. The easiest is to fill the cereal with boiling water, cover with a lid and leave to swell. Bulgur can also be cooked as an ordinary cereal, in a small amount of water with salt. Today I offer to your attention the bulgur pilaf with vegetables, the cooking recipe is simple and fast. It turns out very tasty and useful side dish to meat or fish. During fasting days bulgur with vegetables can be a full independent dish. A variety of fresh or frozen vegetables can be used to prepare this recipe: eggplant, zucchini, bell pepper, broccoli, cauliflower, tomatoes or green beans. In the process of preparation the bulgur is impregnated with vegetable juice and becomes very fragrant and fluffy.

Ingredients

  • Water
    3 glass
  • Bulgur
    1.5 glass
  • Carrot
    1 pcs
  • Bell pepper
    1 pcs
  • Onion
    1-2 pcs
  • Garlic
    3 clove
  • Green peas
    100 g
  • Cherry tomatoes
    2-4 pcs
  • Olive oil
    50 ml
  • Cumin
    1 tsp
  • Paprika
    1 tsp
  • Salt
    - to taste
  • Parsley
    - to taste



Steps

  • 1. Let's prepare vegetables. Peel onions and cut into small cubes. Wash carrots, peel and grate on a large grater. Cut cherry tomatoes into rings. Clean the bell pepper from seeds and cut into cubes.
  • 2. In a deep frying pan, pour olive oil. Add cumin and ground paprika. Heat the frying pan with oil so that the spices reveal their aroma.
  • 3. Put the ground onions in the frying pan. Stir periodically and fry vegetables on medium heat until light golden brown.
  • 4. Then add bell pepper and grated carrots to the onion. Stir and continue to fry the vegetables together for a few more minutes.
  • 5. Wash the bulgur carefully and add to browned vegetables. Stir and for a few minutes fry the bulgur with vegetables, the recipe I suggest you to cook.
  • 6. Add green peas, cherry tomatoes and knife-crushed garlic cloves to the frying pan.
  • 7. Fill the ingredients with hot water at the rate of 2 parts of liquid per 1 part of cereal. Cover the frying pan with a lid and cook bulgur with vegetables on a low fire until all the liquid from the frying pan is evaporated. In the process of preparation of bulgur with vegetables it is not necessary to stir.
  • 8. At the end of the preparation let’s supplement the bulgur with vegetables (recipes with photos) with finely cut parsley.
