Easy Chicken Rice Soup

Let’s prepare delicious homemade soup based on chicken broth for lunch. If desired, fresh vegetables can be added to chicken broth with rice so that the dish is thicker and more nutritious. Today, in addition to cereal, I will use carrots, onions, potatoes and fresh tomatoes. Celery, bell pepper or frozen green peas can also be added to the soup. Soup to this recipe turns out very tasty and fragrant, it is a great way to diversify the everyday menu. To save time, you can use ready-made chicken broth for preparation.

  • Chicken drumsticks

  • Potato

  • Long-grain rice

  • Olive oil
    50 ml

Steps

  • 1. Wash chicken drumsticks, transfer to a pan and pour with two liters of cold water. Cover the pan with a lid, put it on the fire and bring the water to boiling. Remove the rising foam with skimming dish, reduce the fire and continue to cook chicken broth for 30 minutes.
  • 2. Meanwhile, let’s prepare the vegetables. Wash the potatoes, peel and cut into bars.
  • 3. Remove chicken drumsticks from the ready broth. Put crushed potatoes into boiling chicken broth.
  • 4. Next to the potatoes let’s add carefully washed rice, following the recipe of soup on chicken broth with rice.
  • 5. Peel onions and cut into cubes. Wash carrots, peel and grind on a large grater.
  • 6. Put crushed onions on a frying pan with heated olive oil. Stir periodically and fry vegetables until a light golden brown.
  • 7. Then add grated carrots to the browned onion. Stir and continue to fry the ingredients together until the carrots are soft.
  • 8. When potatoes and rice reach semi-readiness, let’s add browned vegetables to the soup. Continue to cook chicken soup with rice, the recipe of which I recommend you to cook, on low fire.
  • 9. At the end of the preparation add finely cut tomato (I used cherries), salt, seasonings and dill to the pan.
  • 10. Bring the soup to a boil, and then turn off the fire. Pour the ready dish into deep plates. Supplement each portion of soup with a piece of boiled chicken meat.
