How to Can Sorrel

I offer you a simple and fast home preservation for tasty green borsch - sorrel in jars without sterilization. The sorrel contains a sufficient amount of sorrel acid, so it is perfectly stored all winter without adding vinegar and sterilization. For preservation, use fresh young sorrel leaves without any damages. It is most convenient to use glass jars with a volume of 0.5 liters. Such an amount of sorrel is just enough to prepare a two-liter pan of green borsch.


Ingredients

  • Sorrel
    300 g
  • Water
    2 l
  • Salt
    4 tbsp



Steps

  • 1. Sort the sorrel, wash carefully and cut off the stems.
  • 2. Cut the sorrel leaves into straws of 2 cm thick.
  • 3. Sterilize glass jars and metal lids. Fill the sterilized jars with crushed sorrel and tightly beat down the greenery with a rolling pin. As you can see, preparing sorrel for winter does not take much time.
  • 4. Add one teaspoon of coarse salt to each jar.
  • 5. Bring two liters of water to a boil. Carefully fill the sorrel with salt and boiling water. Water should reach the edge of the jar.
  • 6. Cover the jars with sterilized metal lids and roll them with a special machine. Turn the jars with the sorrel upside down, cover with the plaid and leave until completely cooled.
  • 7. The sorrel for winter is ready. Store it in a dark cool place. Bon Appetite!
