Garlic and Cheese Zucchini

From zucchini you can make many dishes with completely different recipes and ingredients. The simplest and most popular dish from this vegetable is fried zucchini. Zucchini with garlic and cheese is a wonderful snack from seasonal vegetables, which will perfectly complement both the holiday and everyday menus. The neutral taste of zucchini is emphasized by piquant hard cheese and fragrant garlic. The recipe is simple and budget, and the snack is tasty and hearty. If desired, mayonnaise can be replaced with sour cream or homemade sauce. For frying, choose young vegetables with a thin peel and unripe seeds. Use fleshy tomatoes so that they do not release much juice when cut.

  • 1. Wash the zucchini and cut off the tails. Cut vegetables into circles 1 cm thick. Dry cut vegetables with a paper towel from excess juice.
  • 2. Put zucchini circles in a frying pan with pre-heated olive oil. Fry zucchini with cheese and garlic in a frying pan on a medium heat to a golden crust on both sides. Shift the fried vegetables on a plate covered with paper towels to remove excess oil.
  • 3. Grind hard cheese on a large grater and transfer it to a deep bowl.
  • 4. Add mayonnaise and garlic cloves passed through the press to hard cheese.
  • 5. Mix the mixture until homogeneous consistence, keeping to the recipe of zucchini with cheese and garlic.
  • 6. Salt each circle of fried zucchini and put 1 teaspoon of cheese mixture on top. Decorate the snack with a circle of cherry tomato and parsley. Snack can be served immediately after cooking or pre-cooled in the fridge.
