Sausage Peas Soup

Let’s cook tasty and hearty pea soup with sausages for lunch. This dish is a complete delight, from the taste and aroma to the simplicity and speed of its preparation. To cook today's soup, I recommend using yellow split peas. The cooking time is 25-30 minutes, such peas do not require pre-soaking. Sausages give the finished dish an appetizing aroma of smoked products, thanks to which the taste of soup becomes richer and more interesting. Pea soup according to this recipe can be prepared on any basis, whether it is water or rich chicken broth.

Ingredients

  • Water
    2 l
  • Potato
    3 pcs
  • Carrot
    1 pcs
  • Onion
    2 pcs
  • Smoked sausage
    250 g
  • Split peas
    150 g
  • Olive oil
    50 ml
  • Paprika
    0.25 tsp
  • Khmeli-suneli
    0.25 tsp
  • Allspice
    3 pcs
  • Bay leaf
    1-2 pcs
  • Dill
    15 g
  • Parsley
    15 g
  • Salt
    - to taste



Steps

  • 1. Wash split peas thoroughly and transfer to a deep pan. Fill the peas with two liters of cold water. Cover the pan with a lid and put it on high fire. After boiling, remove the rising foam with skimming dish and reduce the fire to a minimum.
  • 2. Wash the potatoes and peel them. Cut tubers into medium-sized cubes.
  • 3. In 15 minutes after water boils, add cut potatoes to the peas.
  • 4. Peel onions and cut into small cubes.
  • 5. Wash carrots, peel and cut into quarter rings using a figured knife.
  • 6. Put the crushed vegetables in a frying pan with pre-heated olive oil. Stir periodically and fry onions with carrots on a low heat until soft.
  • 7. When the potatoes are cooked to semi-readiness, add browned vegetables to pea soup with smoked sausages.
  • 8. Cut smoked sausages into rings.
  • 9. Right after the vegetables, let’s add cut sausages to the soup.
  • 10. Put finely chopped dill and parsley in a pan. Add salt and seasonings to taste, mix.
  • 11. Bring the soup to a boil again, and cook it on a low heat for another 5 minutes, and then turn off the fire. Pea soup with smoked sausages is ready, pour it into serving plates and serve it with garlic or rye croutons.
