Today we are preparing a light and simple dish - rice casserole, which will fit perfectly to any version of the family menu. A delicate zucchini casserole with rice can be an independent dish or serve as a side dish for fish or poultry. The zucchini is combined well with rice, making the casserole juicy and airy. Hard cheese gives the dish a saturated creamy taste and forms an appetizing golden crust during baking. This light and tasty casserole can be served for breakfast or taken with you for a picnic. For the recipe, I recommend using a young zucchini with small seeds and a thin peel.

  • 1. Wash the zucchini and cut off the tails. Grate vegetable on a large grater. Squeeze the grated zucchini from excess juice and transfer the vegetables to a deep bowl.
  • 2. Grate a piece of hard cheese on a large grater. Add half of the grated cheese to the raw zucchini.
  • 3. Put the bag with rice into boiling water and cook the cereal to readiness.
  • 4. Peel onions and cut into medium-sized cubes. Put the crushed vegetables in a frying pan with pre-heated vegetable oil. Stir periodically and brown the onions until a light golden brown.
  • 5. Cool the boiled rice to room temperature and add to the rest of the ingredients.
  • 6. Break 4 chicken eggs into the obtained mixture.
  • 7. Add salt, seasonings and finely chopped fresh greenery so that the casserole with rice and zucchini becomes more fragrant.
  • 8. Thoroughly mix the ingredients, achieving a homogeneous consistence.
  • 9. Grease heat-resistant form for baking with butter. Transfer in a prepared form a mixture for rice casserole.
  • 10. On the top, evenly distribute the second half of grated cheese.
  • 11. Send the casserole to the oven pre-heated to 180 degrees for 30-35 minutes. During this time, the casserole with zucchini and rice will be completely baked and reddened.
  • 12. Let’s cut the finished casserole into serving pieces and serve it warm with sour cream or your favorite sauce.
