Onion and Eggs Hand-Held Pies

Let’s prepare delicious hand-held pies with eggs and green onions on a lenten yeast dough, which does not require prolonged proofing. Pies according to this recipe can be baked in the oven or fried in oil on a frying pan. During the baking process, the pastries rise well, become very soft, airy and do not get hard for a long time. The recipe is budget, simple and fast enough to cook. After kneading the dough, you can immediately form pies with your favorite filling, which significantly saves time. If desired, before baking, the pies can be decorated with flax or sesame seeds.


  • Whole wheat flour
    700 g

    350 ml
  • Vegetable oil
    70 ml
  • Active dry yeast

  • 1. First let’s prepare the pre-dough. In deep bowl, let’s combine fast-acting dry yeast and sugar.
  • 2. To the received mixture add 3 tablespoons of wheat flour (from the total amount of flour).
  • 3. Let's add warm water to the mixture (temperature 38-40 degrees). Stir the pre-dough until homogeneity, cover with a towel and leave in a warm place for 15 minutes.
  • 4. After 15 minutes, the pre-dough should begin to foam and increase in volume.
  • 5. Add half of the sifted wheat flour to the pre-dough.
  • 6. Mix the pie dough until homogeneity with a rubber spatula.
  • 7. Add the remaining wheat flour to the dough, add salt. Mix the dough again until homogeneous. Let's pour vegetable oil in the bowl with the dough.
  • 8. Thoroughly mix the dough for 10 minutes. It should become soft, elastic and not stick to the hands. The dough is ready, from it you can immediately form hand-held pies with egg and onions, without prior proofing.
  • 9. Let’s prepare a filling for pies. Boil eggs hard, chill, peel from shell and cut into small cubes.
  • 10. Wash green onion feathers and cut into thin rings.
  • 11. On a frying pan with melted butter put crushed green onions. Stir periodically and brown green onions on a low heat for 3-5 minutes.
  • 12. To crushed boiled eggs let’s add browned green onions cooled to room temperature. Salt to taste the filling for pies, season with black ground pepper and mix it.
  • 13. Let’s divide the finished dough into 18 parts, form balls with a weight of 50 g each. Then roll each dough ball into a flat cake. In the center of each flat cake put 1-1.5 tablespoons of filling. Pinch the edges of the dough, forming a hand-held pie with egg and onions, the recipe of which I offer you.
  • 14. In this way let’s form all the pies. Let's put the products on a baking sheet, lined with parchment paper. Grease the products with a whipped egg, using a culinary brush.
  • 15. Send pies with green onions and eggs to the oven pre-heated to 180 degrees for 20-25 minutes. During this time, the products will increase in size and reddens.
  • 16. Chill finished pies a little on the wire rack, covered with a dry towel, and serve in a warm form.
