Roasted Eggplant Fan

In the eggplant season, I recommend preparing an unusual festive dish with chicken mince and a beautiful cheese and tomato hat. The finished dish looks very spectacular and has amazing taste. The eggplant fan is very juicy and fragrant. The dish is baked in the oven, so it turns out not only useful, but also low-calorie. For a recipe, choose young vegetables of small size with a thin peel. Typically, such vegetables do not require pretreatment. If the eggplant has a bitter taste, first soak the vegetables cut into fan in cold salted water for 20 minutes.

  • Eggplant

  • Garlic

  • Chicken fillet

  • Cheese

    0.5 tsp

Steps

  • 1. Wash eggplants and remove the stem. Cut vegetables along into thin plates 5-7 mm wide, without cutting several centimeters to the top. Slightly press the vegetables with your palm at the top so that the eggplant opens like a fan.
  • 2. Wash chicken fillet and clean it from fat and skins. Cut the meat into medium-size pieces and transfer to a blender bowl. Peeled from husk onions and garlic cut largely and add to chicken fillet. Add salt and seasonings to the obtained mixture of meat and vegetables, then ground into homogeneous thick mince.
  • 3. Put the prepared eggplants on a baking sheet lined with parchment paper. On each plate of vegetables with the help of a teaspoon let’s put a thin layer of chicken mince. Salt and season with black ground pepper to taste each eggplant fan. Send our preparations to the oven heated to 180 degrees for 20 minutes.
  • 4. In the meantime, prepare the rest of the ingredients. Wash fresh tomatoes and cut into small cubes.
  • 5. Grind hard cheese on a large grater and add to cut tomatoes. Mix thoroughly.
  • 6. After 20 minutes, get eggplant fans from the oven. On top of vegetables, let’s evenly distribute a mixture of cheese and tomatoes, following the recipe of eggplant fans.
  • 7. Return our eggplant fan with tomato and cheese to the oven for another 20 minutes. During this time, vegetables and chicken mince will be completely cooked, and hard cheese will melt and redden.
  • 8. Serve the roasted eggplant fans in hot form, decorated with fresh parsley.
