Zucchini Pickles

Let’s prepare zucchini pickles, the recipe has been tested for years and it always gets right. The zucchini prepared in this way my family loves even more than pickled cucumbers. Vegetables are very tasty, fragrant and crispy. This recipe does not require sterilization, so preparation of preservation will not take much time and effort. To give the zucchini a piquant note, add fragrant greenery, garlic and seasoning to each jar. They will make the vegetables spicy and help to preserve the zucchini.

Steps

  • 1. Let’s sterilize jars and metal lids. Prepare all the necessary ingredients per 1 liter jar. Wash leaves of blackcurrant, cherries and apple tree. Cut largely horseradish leaves, dill stems and estragon. Peel garlic cloves. Clean the root of the horseradish and cut into pieces.
  • 2. Put blackcurrant, apple tree and cherry leaves on the bottom of the sterilized jar. Add large-cut horseradish leaves, dill flowers, estragon and bay leaf.
  • 3. Add horseradish roots, garlic cloves, coriander grains and black allspice peas to each jar. Thanks to the spices zucchini pickles will be fragrant.
  • 4. Wash the zucchini and cut off the tails. Cut the vegetables into circles 1 cm thick.
  • 5. Fill the prepared jars with zucchini circles, tightly compacting vegetables.
  • 6. Fill vegetables in jars with boiling water. Cover the jars with lids (do not tight!), Enwrap with a plaid and leave for 20 minutes.
  • 7. After the specified time, pour water from the jars into the pan. For this purpose, it is convenient to use a special lid with holes.
  • 8. Add sugar to the pan with marinade.
  • 9. Next add large salt.
  • 10. Let's pour 9% vinegar to the marinade so that zucchini pickles are well stored. Mix so that all ingredients completely dissolve. Bring the marinade to a boil.
  • 11. Re-fill with boiling marinade the zucchini circles. Cover them with lids and tight them.
  • 12. Turn jars with preservation upside down, wrap with a plaid and leave to cool for 1 day. Store the finished preservation in a dark cool place.
