Pureed Broccoli Soup

Let’s cook light and very tasty lenten broccoli soup for lunch. Its delicate exquisite taste and cream consistence will appeal not only to adults, but also to children. This broccoli soup recipe does not contain milk ingredients. Therefore, such a main dish is great for baby food, lean or dietary menu. Fresh or frozen broccoli inflorescences can be used for the recipe. Soup can be cooked on water or vegetable broth. In the cool season, pureed broccoli soup will not only help warm up, but also fill the body with all the necessary vitamins.

  • Water
    1.5 l
  • Broccoli
    600 g
  • Potato
    3-4 pcs
  • Onion
    1-2 pcs
  • Garlic
    1-2 clove
  • Olive oil
    30 ml
  • Provencal herbs
    1 tsp
  • Parsley
    30 g
  • Salt
    - to taste

Steps

  • 1. Peel white onions from husks and cut them into small cubes. Peeled garlic cloves cut into thin slices.
  • 2. Put the crushed vegetables in a deep pan with pre-heated olive oil. Stir and brown onions with garlic on a medium heat until a light golden brown.
  • 3. Wash potatoes, peel them and cut into pieces of medium size.
  • 4. Add crushed potatoes to browned vegetables. Stir and continue to fry the vegetables together for another 2-3 minutes.
  • 5. Continue to cook easy broccoli soup: wash broccoli and divide it into small inflorescences.
  • 6. Add broccoli to the pan with vegetables.
  • 7. Fill the ingredients with hot water. If desired, vegetable broth can be used instead of water. Cover the pan with a lid and cook vegetables on low heat until ready.
  • 8. At the end of the preparation, add finely chopped parsley, salt and seasonings to taste.
  • 9. Take 3-4 ladles of broth from the soup. Grind the soup into a homogeneous thick puree using a hand blender. Adjust the density of the soup by adding a little broth to it.
  • 10. Let's get the soup pan back on the fire. Let the soup boil for 1 minute, and then turn off the fire. Finished pureed broccoli soup without cream pour into serving plates, decorate with greenery and serve with croutons.
