In terms of nutritional qualities, vegetable fritters are not inferior to meat products. At the same time, they are much cheaper and less caloric, but no less tasty and useful. Broccoli fritters are a wonderful way to diversify the side dishes, replacing boiled broccoli with appetizing fritters. If desired, the fritters can not be fried in a frying pan, but baked in the oven. So the products will be more useful and even less caloric. Wheat flour in the recipe can be replaced with rice flour, breadcrumbs or oat cereal. Preparing fritters is fast and easy. Frozen vegetables can be used in the non-season. As a rule, before freezing, broccoli is blanched, so before cooking, it is enough to simply pour with boiling water.

Crispy Broccoli Cheese Fritters


  • 1. Wash broccoli, sort it into small inflorescences and transfer it into a pan of a suitable size. Fill the vegetables with boiling water, boil on a low heat for 5 minutes, then cast away on the sieve and cool to room temperature.
  • 2. Put blanched broccoli in a blender cup, add large-cut onions. Grind the vegetables into homogeneous puree.
  • 3. Put the puree from broccoli and onions into a deep bowl, add one chicken egg.
  • 4. Grind hard cheese on a large grater and add to the rest of the ingredients.
  • 5. Add salt, seasonings and finely chopped parsley to mince for broccoli fritters.
  • 6. To keep broccoli cheese fritters well in shape and do not break during frying, add a little wheat flour to the mince.
  • 7. Mix the mince thoroughly so that all the ingredients are combined.
  • 8. In a heated frying pan with olive oil, let’s put a small amount of finished mince, forming round or oval fritters.
  • 9. Fry the products till golden on a medium heat, then carefully turn them to the other side and bring them to readiness. So we'll make all the vegan broccoli fritters. Transfer the finished products on a plate covered with paper towels to remove excess oil.
