It is desirable to use young zucchini with a thin peel and unripe seeds. If desired, grated hard cheese and finely cut onions can be added to the finished dough. Wheat flour in this recipe can be replaced by rice flour or use semolina in the same proportions.

Crispy Zucchini Fritters


  • 1. In a deep bowl, combine 3 chicken eggs, salt and black ground pepper.
  • 2. Whip the mixture with a wire whisk until homogeneous consistency.
  • 3. Wash dill and parsley, finely chop and add to the egg mixture. So that the zucchini fritters become more fragrant, add a garlic clove passed through the press.
  • 4. Wash the zucchini and grind it on a large grater.
  • 5. Squeeze the grated zucchini from excess juice, then add to the rest of the ingredients.
  • 6. Add sifted wheat flour to the obtained mixture.
  • 7. Mix the mixture thoroughly. Ready dough for fritters should have thick sour cream consistency.
  • 8. On a frying pan with heated vegetable oil, put a tablespoon of dough, forming small round fritters.
  • 9. Fry zucchini fritters, the recipe is simple and fast, on a medium heat until golden brown on both sides.
  • 10. Transfer the finished products on a plate covered with paper towels to remove excess oil. Serve ready-made zucchini fritters in warm with sour cream or favorite sauce.
