Mini Egg Pizza

Breakfast pizza with eggs, salami and bell pepper will be an excellent snack option for children and adults. For the pizza base, we will use classic yeast dough on water with the addition of olive oil. The dough is soft and airy, it rises well during baking and remains soft for a long time. The filling for pizza will be salami, bell pepper, red onions, mozzarella and eggs. I used chicken egg yolks, also quail eggs are good for pizza, they can be used whole. From the remaining egg whites , meringue cookies with nuts or Pavlova dessert can be prepared. From the indicated number of ingredients, I got 8 serving pizzas with a diameter of 12 cm, if desired, you can prepare 2 large pizzas with a diameter of 28-30 cm.

Eggs and Salami Breakfast Pizza

  • 1. First let’s make pizza dough with an egg. In deep dishes, combine warm water, sugar and dry yeast.
  • 2. Stir the mixture with a wire whisk, leave the pre-dough for 10-15 minutes in a warm place so that the yeast is activated.
  • 3. After the pre-dough rises, add to the dough 1/3 part of the sifted wheat flour, salt and olive oil. Mix the ingredients until a homogeneous consistency.
  • 4. Then add the remaining wheat flour into the dough. Knead the soft elastic dough. Transfer the pizza dough into deep dishes greased with vegetable oil. Cover the dough with a dry towel or food wrap.
  • 5. Let's leave the dough in a warm place for 1 hour. During this time, the dough will rise and increase in volume by 2-3 times.
  • 6. Knead the dough that has risen and divide it into 8 parts. Roll each part of the dough into a ball. Let's put the blanks on a baking sheet covered with parchment, at a distance from each other.
  • 7. With the help of a glass, let’s make a deeping in the center of each blank. Grease the pizza bases with tomato sauce mixed with Italian herbs.
  • 8. On the edges of the pizza lay out pieces of salami, bell pepper and red onions. In the center of each pizza gently pour egg yolk.
  • 9. On top, add grated mozzarella, following the breakfast pizza recipe with eggs.
  • 10. Send our mini-pizzas in a heated oven up to 200 degrees for 15-17 minutes. When the egg pizza is browned, get it out of the oven.
  • 11. Let’s serve the finished pizza immediately after cooking, decorating the pastries with fresh parsley.
  • 12. Bon Appetite!
