Pork Soup (Kharcho)

Kharcho soup is a national Georgian beef soup with rice, walnuts and plum tkemali sauce. Today I propose to prepare a variation of pork soup from available ingredients. Instead of beef, we will need pork for kharcho, and instead of plum sauce we will use sour sweet tomato paste. The main thing is to choose certain spices to create a dish that is as similar as possible to traditional kharcho. Ideal for this dish is a mixture of khmeli-suneli spices, grounded coriander, fresh garlic and crushed walnuts. Thick, fragrant, moderately hot and very tasty pulled pork soup will not leave anyone indifferent. Pork and Tomato Soup


Steps

  • 1. Wash the pork, clean it from fat and skins and cut it into pieces of medium size. Put the meat in a pan, add several circles of carrots, a small onion and several stems of parsley or cilantro. Fill the ingredients with two liters of cold water. Cover the pan with a lid, bring the broth to a boil, remove the foam with a skimming dish. Cook the broth for 30 minutes, then remove vegetables and greenery from the pan (we don’t need them anymore).
  • 2. In the finished broth let’s put washed rice. Cover the pan with a lid and cook the soup on a low heat for 7-10 minutes.
  • 3. Peel the second onion and cut it into small cubes.
  • 4. Put the crushed onions in a frying pan with heated olive oil. Stir periodically and brown onions on a low heat until a light golden brown.
  • 5. Cut the remaining carrots into small cubes.
  • 6. Add crushed carrots to browned onions. Mix and continue to fry the ingredients together for another 3-4 minutes.
  • 7. Finely cut the fresh tomato.
  • 8. Add crushed tomatoes and tomato paste to browned vegetables. Stir periodically and simmer the ingredients on a low heat for 5 minutes.
  • 9. When rice is almost ready, add a vegetable mixture to the homemade tomato soup.
  • 10. Next, add salt, finely chopped greenery and spices to the soup.
  • 11. To make pork soup, the recipe that I suggest you cook, more fragrant, add garlic cloves passed through the press.
  • 12. Crush largely walnut kernels.
  • 13. Add crushed walnuts to the soup.
  • 14. Bring the kharcho to a boil, boil for 1-2 minutes, after which turn off the fire. Let's leave the soup to infuse for 10 minutes, then pour into the serving plates and serve.
