Easy Cherry Puff Pastry Pie

A delicate puff pastry pie is ideal for a homemade tea party. Such sweet cherry pie can be prepared at any time of the year, since both fresh and frozen berries are suitable for filling. The preparation of this easy cherry pie will take a minimum of time and effort, because we will use the finished puff pastry as the basis. It is only necessary to get it out of the fridge in advance so that it unfreezes at room temperature and becomes elastic. A fragrant pie with a thin crisp dough and a lot of sour-sweet filling will appeal to all fans of pastries with cherries. To make the cherry pie, I used a ceramic baking form with a diameter of 22 cm.

  • Corn starch

    2 tbsp

  • 1. Wash the cherries, remove the stones and transfer them to a deep bowl.
  • 2. Add sugar to the cherry, stir and leave for 15 minutes at room temperature so that the berries drip juice.
  • 3. After 15 minutes, add corn starch to the cherry, mix.
  • 4. Transfer the ingredients for puff pastry cherry pie filling into a small saucepan. Bring the filling to a boil. Stir and boil the cherry for 2-3 minutes until thickening. Cool the filling to room temperature.
  • 5. Meanwhile, let’s prepare the basis for the pie. On the working surface covered with flour, roll the unfrozen puff pastry into a round layer 2-3 mm thick. Put the dough in a heat-resistant form for baking, forming sides of the pie.
  • 6. Put cherry filling cooled to room temperature on the base of the pie. Roll the remaining puff pastry, using a shaped knife, cut the dough into strips 1-2 cm wide. From the strips of puff pastry let’s form a figured grid on the surface of the pie. Cut out the extra dough with a knife.
  • 7. Grease the blank with a whipped egg so that the puff pastry pie with cherry turns out to be golden.
  • 8. Send the cherry pie to the oven heated to 200 degrees for 25-30 minutes. When the pastries redden, take it out of the oven and cool it to room temperature.
  • 9. Before serving, decorate the pie with powdered sugar. Serve cherry pie from puff pastry with tea or coffee.
