Polish Chicken Roulades (Zrazy)

Zrazy is a meat roulade dish popular in Poland (Silesian rouladen), western Belarus and Lithuania. Its origin can be traced back to the times of the Polish–Lithuanian Commonwealth. Crunchy on the outside and juicy on the inside, chicken roulade turns out to be very tasty and gentle. As a filling for chicken breast roulade, we will use boiled eggs and hard cheese mixed with dill and melted butter. Today, for the recipe, we will need chicken fillet crushed in a blender or meat grinder. I also recommend making potato zrazy with mushrooms, a detailed recipe is already on the site!

How to Make the Best Chicken Roulade


  • 1. Boil hard chicken eggs, cool, peel from the shell and grind on a large grater. Grate hard cheese on a large grater, add to the eggs.
  • 2. Finely chopped dill and add to the obtained mixture. Melt butter, add to the filling for stuffed chicken roulade, mix thoroughly.
  • 3. Let’s prepare mince, following the chicken roulade recipe. Wash chicken fillet, clean from fat and skins, for convenience, cut into medium-sized pieces. Pour slices of white bread with milk, let's leave for 5 minutes. Peel onions and garlic from husks, cut into several parts. In a bowl of blender, transfer chicken fillet, white bread, onions and garlic. Add salt and seasonings.
  • 4. Grind the ingredients into homogenous mince.
  • 5. Let's start to form chicken roulades. From a small amount of mince, form a circle. In the center put a tablespoon of filling from boiled eggs and hard cheese. Join the edges of the blank, coat it in bread crumbs.
  • 6. When all the roulades are formed, transfer them in a frying pan with pre-heated vegetable oil.
  • 7. Fry zrazy on a medium heat to a golden crust from all sides.
  • 8. Serve ready chicken zrazy in hot with your favorite side dish.
