Tsubu-an & Salted butter Scones

Ingredients Makes about 9scones

  • 140g Bread flour
  • 60g Whole wheat flour
  • 20g Light brown sugar
  • 1g Pink salt
  • 6g Baking powder
  • 50g Unsalted butter
  • 40g Cold Milk
  • 80g Cold Unsweetened yogurt
  • 40g Walnuts (roasted and chopped into large pieces)

Directions

①Cut the butter into 0.4in cubes and cool in the freezer for 10 minutes.
②Combine flour, baking powder, whole wheat flour and sugar in a bowl and mix well.
③Add cold butter, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
④Add cold milk and cold unsweetened yogurt use a dough scraper or spoon to stir until combined.
***If the dough is too sticky, add flour until it is manageable.
⑤Add walnuts, and fold roughly. Put it out on the work surface.
⑥Fold it in two.
Rotate the dough and fold in two.again,repeating this step 3-4 times.
(Sprinkle Bread flour to prevent the dough from sticking)
⑦Shape dough into a square and let it sit in a freezer for 15 mins.
Preheat the oven to 374 °F/190℃
⑧Cut it into 9 equals.
⑨Place them on a baking sheet lined with parchment paper.
⑩Bake for 16 mins until risen and until slightly browned.
Make a sandwich with red bean paste and butter on top.
