Baked Chicken Thighs and Rice with Carrots

This Easy baked chicken thighs and rice with carrots is a great family dinner idea. The chicken is one of the best ways to bake chicken thighs and the rice and carrots are so succulent and flavorful.

INGREDIENTS

For the chicken

  • 6 bone in skin on chicken thighs
  • 2 Tbs lemon juice
  • 1 tsp rosemary
  • 1 tsp oregano
  • 1 tsp thyme
  • 1/2 Tbs garlic powder
  • 1/2 Tbs onion powder
  • 1/2 Tbs Adobo seasoning
  • 2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 Tbs brown sugar
  • salt and pepper to your taste (i used about 1 tsp salt 1/4 pepper )

For the rice

  • 2 cups white rice
  • 3 cups hot chicken broth
  • 1/4 cup minced onion
  • 1 tsp smoked paprika
  • 1 tsp curry powder
  • 1 tsp adobo seasoning
  • 1/4 tsp cayenne pepper
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 3 Tbs salted butter
  • salt and pepper to your taste

For the Carrots

  • 2 Tbs butter
  • 4 big carrots
  • 1/2 cup sliced onion
  • salt and pepper to your taste
  • 1/4 cup apple juice
