Watermelon sorbet

INGREDIENTS

500g watermelon 100g (½ cup) sugar 230ml (1 cup) water Lemon juice 1 egg white

METHOD

  1. Grind watermelon in a blender. Strain the resulting mixture.
  2. Melt the sugar in the water on the fire.
  3. When the mixture has cooled, add it to the blender together with the strained watermelon and lemon juice.
  4. Pour the resulting mixture into a mold and put in the freezer.
  5. Whisk the egg whites and mix with the softened watermelon mixture in a blender.
  6. Pour back into the mold and cool in the freezer. Serve.
