Watermelon sorbet
INGREDIENTS
500g watermelon 100g (½ cup) sugar 230ml (1 cup) water Lemon juice 1 egg white
METHOD
- Grind watermelon in a blender. Strain the resulting mixture.
- Melt the sugar in the water on the fire.
- When the mixture has cooled, add it to the blender together with the strained watermelon and lemon juice.
- Pour the resulting mixture into a mold and put in the freezer.
- Whisk the egg whites and mix with the softened watermelon mixture in a blender.
- Pour back into the mold and cool in the freezer. Serve.
