Sandwich cookies

INGREDIENTS
- 2 eggs
- A pinch of salt
- 8g (1 3/4 tsp) vanilla sugar
- 100g (1/2 cup) sugar
- 150 ml (2/3 cup) vegetable oil
- 8g (1 3/4 tsp) baking powder
- 400g (3 1/3 cups) flour
- 200g (2/3 cup) of strawberry jam
- 2-3 drops red food coloring
- Shredded coconut
METHOD
- In a bowl whisk 2 eggs with a pinch of salt, sugar, and vanilla sugar.
- Add oil and continue to whisk until smooth.
- Stir in baking powder and flour, and start to mix the dough with a spatula. Then continue to knead it with your hands until you receive an elastic dough.
- Roll mixture into small 20g balls and flatten slightly.
- Arrange on a baking tray lined with parchment paper.
- Bake in the preheated to 180°C/360°F oven for 25 minutes.
- Add strawberry jam and food coloring to a saucepan and heat on low for 2 minutes. Transfer into a bowl.
- Sandwich biscuits together using obtained jam mixture.
- Brush kisses all over with jam and coat in shredded coconut. Arrange on a plate and serve.
