Sandwich cookies

INGREDIENTS

  • 2 eggs
  • A pinch of salt
  • 8g (1 3/4 tsp) vanilla sugar
  • 100g (1/2 cup) sugar
  • 150 ml (2/3 cup) vegetable oil
  • 8g (1 3/4 tsp) baking powder
  • 400g (3 1/3 cups) flour
  • 200g (2/3 cup) of strawberry jam
  • 2-3 drops red food coloring
  • Shredded coconut

METHOD

  1. In a bowl whisk 2 eggs with a pinch of salt, sugar, and vanilla sugar.
  2. Add oil and continue to whisk until smooth.
  3. Stir in baking powder and flour, and start to mix the dough with a spatula. Then continue to knead it with your hands until you receive an elastic dough.
  4. Roll mixture into small 20g balls and flatten slightly.
  5. Arrange on a baking tray lined with parchment paper.
  6. Bake in the preheated to 180°C/360°F oven for 25 minutes.
  7. Add strawberry jam and food coloring to a saucepan and heat on low for 2 minutes. Transfer into a bowl.
  8. Sandwich biscuits together using obtained jam mixture.
  9. Brush kisses all over with jam and coat in shredded coconut. Arrange on a plate and serve.
