Ice cream cookies


  • 150g (3/4 cup) of mascarpone
  • 500ml (2 cups) of whipping cream
  • 100g of dark chocolate flakes
  • 1 tsp of coffee
  • 50g of wafer
  • 200g of dry biscuits
  • Milk
  • Cocoa powder


  1. In a bowl add the mascarpone, and whipping cream, and mix with an electric mixer. Add the chocolate flakes, and coffee and crumble the wafer. Mix everything well with a spatula.
  2. Dip each biscuit in milk and arrange the bottom layer on the tray with mold. Spread the prepared cream and flatten it with a spatula.
  3. Arrange the top layer of the biscuits to cover the cream. Transfer to the freezer for 4 hours.
  4. After time has elapsed cut into single pieces and decorate some of them with cocoa powder.
