Peach Galette

►1 lb peaches, about 3-4 medium peaches
►1/4 cup sugar
►1 Tbsp all-purpose flour
►1/2 tsp ground cinnamon
►1/2 tsp pure vanilla extract

PEACH GALETTE CRUST:
►1 1/3 cup all-purpose flour
►1 Tbsp granulated sugar
►1/2 tsp fine sea salt
►1/2 cup or 8 Tbsp very cold unsalted butter
►5-6 Tbsp ice water
►1 egg, beaten for egg wash
►1 Tbsp coarse sugar
