Onion omelette
A quick recipe that everyone will love!
INGREDIENTS
- 1 1/2 large red onions, sliced
- 8 eggs
- 50g grated parmesan cheese
- 50g mozzarella cubes
- 1 tbsp of finely chopped parsley
- 1 tsp salt
- 1/3 tsp black pepper
- 15ml olive oil
METHOD
- In a pan add olive oil, sliced onions, salt, and pepper.
- Pour in eggs, cheese, parsley, and mix well.
- Cover and cook on low heat for 4-5 minutes, turn over and cook for 2 minutes more.
