Soft Makhana Dosa incorporates makhana into the dosa batter to add a unique flavor and texture to the dish.

Here's a recipe for Soft Makhana Dosa:

Ingredients:

  • 1 cup dosa rice (or regular rice)
  • 1/4 cup urad dal (split black gram)
  • 1/4 cup makhana (lotus seeds)
  • 1/4 cup poha (flattened rice)
  • 1/4 teaspoon fenugreek seeds
  • Salt to taste
  • Water for soaking and grinding
  • Oil or ghee for cooking dosas

Instructions:

  1. Rinse the rice, urad dal, makhana, poha, and fenugreek seeds separately under water. Soak them in water for 4-5 hours or overnight.
  2. Drain the soaked ingredients and transfer them to a blender or wet grinder. Add some water and grind them to a smooth batter. The consistency should be similar to regular dosa batter. Add salt to taste and mix well.
  3. Transfer the batter to a large bowl and cover it. Allow the batter to ferment in a warm place for 6-8 hours or overnight. Fermentation helps in making the dosas soft and fluffy.
  4. Once the batter is fermented, give it a good stir. If the batter appears too thick, add a little water to adjust the consistency.
  5. Heat a non-stick dosa tawa or griddle on medium heat. Grease it lightly with oil or ghee.
  6. Pour a ladleful of the dosa batter onto the tawa and spread it in a circular motion to form a thin dosa. Drizzle some oil or ghee around the edges.
  7. Cook the dosa on medium heat until the edges turn golden brown and the bottom is crisp. Flip the dosa and cook for another minute.
  8. Remove the dosa from the tawa and repeat the process with the remaining batter. You can adjust the size of the dosas as per your preference.
  9. Serve the Soft Makhana Dosas hot with chutney, sambar, or any preferred accompaniment.
