Ingredients & Costing:
- 3 Kilos Chicken Skin
- 1.5 kilos Chicken Fat
- 2 tbsp Rock Salt
- 5 stalks Lemon Grass - FREE (may tanim po kami)
- 1 bulb Garlic
- 2 to 3 tbsp Atsuete or Annatto Seeds - (depende sa gusto mo ma achieve na color)
- 500 ml Canola Oil

- 375 ml Bottle

Mang Inasal is a popular fast-food chain in the Philippines that is known for its grilled chicken, and one of the things that makes their chicken so tasty is their chicken oil. Here's a simple recipe for Mang Inasal-style chicken oil:
Ingredients:
- 1 cup vegetable oil
- 2 tablespoons annatto seeds
- 2 tablespoons garlic, minced
- Salt and pepper to taste
Instructions:
- In a small pot, heat the vegetable oil over low heat.
- Add the annatto seeds to the oil and let it simmer for 15-20 minutes, stirring occasionally. This will give the oil a red-orange color.
- Strain the annatto seeds from the oil and discard them.
- Add the minced garlic to the pot and cook over low heat until the garlic is golden brown and crispy.
- Remove the pot from the heat and let it cool for a few minutes.
- Add salt and pepper to taste, stirring to combine.
- Pour the chicken oil into a small bowl or jar and let it cool to room temperature.
- Serve the chicken oil alongside grilled or roasted chicken.
