Ingredients & Costing:

  • 3 Kilos Chicken Skin
  • 1.5 kilos Chicken Fat
  • 2 tbsp Rock Salt
  • 5 stalks Lemon Grass - FREE (may tanim po kami)
  • 1 bulb Garlic
  • 2 to 3 tbsp Atsuete or Annatto Seeds - (depende sa gusto mo ma achieve na color)
  • 500 ml Canola Oil


  • 150 ml Bottle
  • 375 ml Bottle

Mang Inasal is a popular fast-food chain in the Philippines that is known for its grilled chicken, and one of the things that makes their chicken so tasty is their chicken oil. Here's a simple recipe for Mang Inasal-style chicken oil:


  • 1 cup vegetable oil
  • 2 tablespoons annatto seeds
  • 2 tablespoons garlic, minced
  • Salt and pepper to taste


  1. In a small pot, heat the vegetable oil over low heat.
  2. Add the annatto seeds to the oil and let it simmer for 15-20 minutes, stirring occasionally. This will give the oil a red-orange color.
  3. Strain the annatto seeds from the oil and discard them.
  4. Add the minced garlic to the pot and cook over low heat until the garlic is golden brown and crispy.
  5. Remove the pot from the heat and let it cool for a few minutes.
  6. Add salt and pepper to taste, stirring to combine.
  7. Pour the chicken oil into a small bowl or jar and let it cool to room temperature.
  8. Serve the chicken oil alongside grilled or roasted chicken.
