Veggie Shawarma Rice

Hey Foodies! This Shawarma Rice Bowl is a Filipino dish inspired from Middle Eastern Kebab recipe where grilled beef is served with a margarine seasoned rice together with cucumber, tomatoes and onions.

Ingredients:

Seasoned Rice:

  • 1 1/2 cup long grain rice
  • 1 tsp turmeric powder
  • 1 tsp ginger powder
  • 2 tsp curry powder

Tofu Meat:

  • 400g firm tofu (thawed and pressed after freezing)
  • 30g mushroom
  • 3 tbsp oil
  • 1 white onion
  • 5 cloves garlic
  • 2 tsp cumin
  • 2 tsp turmeric
  • 2 tsp garam masala
  • 2 tsp dried coriander
  • salt and pepper
  • 1/4 cup mushroom stock
  • 3 tbsp coconut aminos

Garlic Sauce:

  • 200ml non dairy yogurt
  • 1 tsp garlic paste
  • salt to taste

Sides:

  • red onion
  • cucumber
  • tomatoes
