Raspberry Streusel Dessert Bars

Featuring a buttery and flaky shortbread crust, a chewy and tart raspberry center, and a crunchy and crumbly streusel topping, our raspberry streusel dessert bars are decadent and tasty! They’ll be all gobbled up before you know it.

Ingredients

Crust:

β€’ 1/2 cup sugar
β€’ 1 cup salted butter
β€’ 2 cups flour
Raspberry Filling:
β€’ 4 cups raspberries
β€’ 1 cup sugar
β€’ 2 tablespoons cornstarch
β€’ 1/4 cup water
Streusel Topping:
β€’ 1 cup all-purpose flour
β€’ 3/4 cup brown sugar tightly packed
β€’ 1/2 cup old fashioned rolled oats
β€’ 2 tablespoons white sugar
β€’ 1 teaspoon cinnamon
β€’ 6 tablespoons salted butter cubed
Glaze (Optional):
β€’ 1/2 cup powdered sugar
β€’ 2-3 teaspoons milk
β€’ 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees. Line with parchment or grease a 9x13 baking pan.
  2. In a medium-sized mixing bowl, use a pastry cutter to combine butter, sugar, and flour together, or use a food processor. Dough will be crumbly. Press into the bottom of the 9x13 pan and bake for 15 minutes.
  3. While the crust is baking, in a saucepan add in raspberries, sugar, water, and cornstarch. Stir and then heat over medium heat for about 5 minutes until the sugar is no longer granulated and the liquid has thickened.
  4. Spoon the raspberry mixture over the cooked crust.
  5. Make the streusel topping by whisking the Streusel Topping dry ingredients together. Cut in butter until it is evenly crumbly.
  6. Sprinkle the streusel on top of the raspberry layer and bake for 30-35 minutes until the top gets more golden and the raspberry layer is set.
  7. Let cool for at least 2 hours. Drizzle with glaze if desired.
