Quick quesadillas
INGREDIENTS
2 tortillas 4 eggs 1/3 tsp salt 3 tbsp chopped green onion 100g shredded Mozzarella cheese
METHOD
- In a bowl mix together eggs with salt and chopped green onion.
- In the pan fry 1/2 of the egg mixture and top with tortilla, sprinkle with shredded cheese, and cover one half with the other.
