Olive bread sticks


  • 550g (4 1/2 cups) + 250g (2 cups) of all-purpose flour
  • 7g of dry yeast
  • 450ml (2 cups) of water
  • 20g (1 1/4 tbsp) of salt
  • 40ml (3 tbsp) of olive oil
  • 350g of olives


  1. In a bowl with the flour add the yeast and water and mix until is well combined. Cover with the clean film and refrigerate for 10 hours.
  2. In another bowl add the rest of the flour and add the previously prepared mixture. Mix all well, add the salt and olive oil and combine well together.
  3. Add the olives and knead until the olives are soaked into the dough.
  4. Transfer the dough into the oiled bowl, cover with a cloth and let it rise for 2 hours or until is doubled.
  5. After time has elapsed transfer the dough to the working surface and make the 200g loaves. Let them rise for 30 minutes.
  6. After 30 minutes stretch each loaf, cover it with a cloth, and let it rise for 30 minutes.
  7. Remove the cloth and brush generously each loaf with olive oil.
  8. Bake in the oven at 240°C/464°F for 20 minutes.
