Baked Salmon with Veggies

This easy baked salmon and veggies is a great dinner idea. The salmon is baked with potatoes and asparagus, in one pan. It comes out so delicious and flavorful.

INGREDIENTS

  • 4 Salmon Fillets
  • for the marinade
  • 1 Tbs olive oil
  • 1 tsp smoked paprika
  • less than 1/4 tsp cayenne pepper
  • 1/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 dried tsp oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp brown sugar
  • 2 Tbs lemon juice
  • salt and pepper to taste
  • for the potatoes
  • Baby potatoes ( i used almost 1lb)
  • 1 Tbs olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • salt and pepper to taste

For the asparagus

  • 1 lb asparagus
  • 1 Tbs olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • salt and pepper to taste
  • 1 Lemon. (Juice form half lemon drizzled over salmon and veggies, then the other half sliced and topped onto salmon)

Bake at 450F for 15 to 18 mins
