Baked Salmon with Veggies
This easy baked salmon and veggies is a great dinner idea. The salmon is baked with potatoes and asparagus, in one pan. It comes out so delicious and flavorful.
INGREDIENTS
- 4 Salmon Fillets
- for the marinade
- 1 Tbs olive oil
- 1 tsp smoked paprika
- less than 1/4 tsp cayenne pepper
- 1/4 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 dried tsp oregano
- 1/2 tsp dried thyme
- 1/2 tsp brown sugar
- 2 Tbs lemon juice
- salt and pepper to taste
- for the potatoes
- Baby potatoes ( i used almost 1lb)
- 1 Tbs olive oil
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- salt and pepper to taste
For the asparagus
- 1 lb asparagus
- 1 Tbs olive oil
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- salt and pepper to taste
- 1 Lemon. (Juice form half lemon drizzled over salmon and veggies, then the other half sliced and topped onto salmon)
Bake at 450F for 15 to 18 mins
