No-Bake Blueberry Cheesecake
Ingredients
4.7inch (12cm)round Cake Pan
Base:
- 40g Crackers
- 20g Melted butter
Filling:
- 50g Blueberries
- 20g Sugar
- 100g Cream cheese
- 80g Greek yogurt (unsweetened)
- 20g Sugar
- 4g Gelatin powder
- 30g Water
- For Toppings
- Whipped cream
- Blueberries
Directions
Preparation:
Line the base and sides of round cake tin with baking paper.
①Crush crackers to fine crumbs.
Add the melted butter to the crushed biscuit, and mix until well combined.
Press the biscuit mixture into the bottom of the cake pan. Let it sit in a fridge.
②Sprinkle sugar over blueberries in heatproof bowl.
Cover with plastic wrap.
Microwave 600w for 1 minute.Allow to cool.
③Sprinkle Gelatin into Water in a small heat-proof bowl and soak for 10 minutes.
Heat in the microwave for 30 seconds until hot, but do not boil.
④Using a whisk, mix softened Cream Cheese and Sugar until smooth.
Add Yoghurt and blueberries and mix well.
⑤Add dissolved gelatin a little at a time and mix.
⑥Pour the filling over the base.
⑦Leave in a fridge for 2 hours or more to set.
⑧Pipe the cream along the edge of the cake.
Top with blueberries. It's all done!
