Fortune Cookies
Ingredients
10 Cookies
- 40g Unsalted butter
- 35g Powdered sugar
- 40g Egg white
- 40g Cake flour
Directions
Preparation:
Preheat the oven to 338 °F/170℃
①Cream the butter until it becomes soft mayonnaise like. Add the powdered sugar.
②Add the egg white in 4 parts. Mix well each time.
③Sift cake flour. Add all the flour to the batter at once and mix well.
④Use a tsp and drop spoonfuls of batter onto a silpat.(Diameter 3inch)
When baking on a baking sheet, spread a thin layer of butter on the baking shee
⑤Bake at 338 °F/170℃for 7-8 minutes until golden brown.
*You can really only bake two at a time per person you have available to fold them as they cool really quickly and start to solidify.
⑥Remove from the oven and immediately use a spatula to release it from the pan.
⑦Add a fortune into the center of the cookie, fold in half pinch to seal.
Fold the cookie in half on a mug and cool completely.
*I recommend wearing gloves to do this as it is extremely important the the cookies are hot while you fold them.
⑧After completely cooled, store in an airtight container at room temperature for 5 days.
