Oreo tiramisu

INGREDIENTS

26-28 oreo cookies; 4 egg yolks; 100g (½ cup) sugar; 30ml (2 tbsp) water; 280g (1 ¾ cup) mascarpone, room temperature; 120ml (½ cup) full-fat cream; 1 tsp vanilla extract; 240ml (1 cup) cold coffee; Cocoa powder for serving.

METHOD

  1. Using a bain-marie, whisk egg yolks with sugar until pale and fluffy (for around 10 minutes).
  2. Beat full-fat cream with vanilla extract until stiff peaks form.
  3. Add mascarpone and beat again until smooth.
  4. Pour the egg yolk mixture into the cream and whisk until smooth.
  5. Dip each oreo cookie in coffee and place it on the bottom of a square pan (around 20x20 cm). Pour half of the cream and top with leftover cookies.
  6. Cover tiramisu with another half of the cream and smooth the top with a spatula.
  7. Cover tiramisu with plastic wrap and let sit in the fridge for 6 hours.
  8. Dust cocoa powder on top before serving.
