Oreo tiramisu

INGREDIENTS
26-28 oreo cookies; 4 egg yolks; 100g (½ cup) sugar; 30ml (2 tbsp) water; 280g (1 ¾ cup) mascarpone, room temperature; 120ml (½ cup) full-fat cream; 1 tsp vanilla extract; 240ml (1 cup) cold coffee; Cocoa powder for serving.
METHOD
- Using a bain-marie, whisk egg yolks with sugar until pale and fluffy (for around 10 minutes).
- Beat full-fat cream with vanilla extract until stiff peaks form.
- Add mascarpone and beat again until smooth.
- Pour the egg yolk mixture into the cream and whisk until smooth.
- Dip each oreo cookie in coffee and place it on the bottom of a square pan (around 20x20 cm). Pour half of the cream and top with leftover cookies.
- Cover tiramisu with another half of the cream and smooth the top with a spatula.
- Cover tiramisu with plastic wrap and let sit in the fridge for 6 hours.
- Dust cocoa powder on top before serving.
