Beet Red Curry




Beet Red Curry

Ingredients:

  • 70g oil

[spice A]

  • 1 tsp mustard seeds
  • 4 cloves
  • 4 cardamon pods
  • 20 fresh curry leaves
  • 20g garlic
  • 20g ginger
  • 200g onion
  • 80g mushroom
  • 400g beet
  • 150g water
  • 200g coconut milk
  • 200g your choice of beans

[spice B]

  • 1/2 tsp coriander powder
  • 1/4 tsp cumin powder
  • 1/4 turmeric powder
  • 1/4 tsp ceylon cinnamon powder
  • 1/4 tsp cardamom powder
  • 2 tsp salt
  • 2 tsp black sugar

Instructions:

1. put oil in a pan and fry [spice A]
2. add garlic, ginger, onion and mushroom and keep frying until cooked.
3. boil beet with 150g water.
4. in a blender, place all the cooked onion and musuroom, 100g boiled beet, 100g beet broth and 200g coconut milk. blend well.
5. transfer the mixture into a pot, add [spice B], beans, salt and black sugar. simmer a little bit.
6. Enjoy!
