Zucchini and mint fritters
INGREDIENTS
- 2 zucchini
- Salt
- 2 eggs
- 80g (1 cup) of parmesan
- Pepper
- Mint
- 30g (1/4 cup) of all-purpose flour
- Oil for frying
METHOD
- Grate the zucchini, transfer them to the bowl, and season with salt.
- In another bowl add the eggs, parmesan, pepper, and mint and mix. Add the prepared zucchini, and flour and mix everything well.
- Take the mixture with the spoon and transfer to the hot oil and fry until they are golden brown on both sides.
