Zucchini and mint fritters


  • 2 zucchini
  • Salt
  • 2 eggs
  • 80g (1 cup) of parmesan
  • Pepper
  • Mint
  • 30g (1/4 cup) of all-purpose flour
  • Oil for frying


  1. Grate the zucchini, transfer them to the bowl, and season with salt.
  2. In another bowl add the eggs, parmesan, pepper, and mint and mix. Add the prepared zucchini, and flour and mix everything well.
  3. Take the mixture with the spoon and transfer to the hot oil and fry until they are golden brown on both sides.
