Veggie Sandwiches

Ingredients:

-Coleslaw-

  • 1/2 cup red cabbage
  • 1/2 cup carrot
  • 1 tsp apple cider vinegar
  • 4 tbsp chickpea mayonnaise
  • salt and pepper to taste

-Spread-

  • 1/4 cup chickpea mayonnaise
  • 1 tsp mustard
  • black pepper
  • -Sandwich-
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 50g shiitake mushrooms
  • 1 tbsp coconut aminos
  • dash of liquid smoke
  • Salt
  • Cucumber
  • Tomato
  • Red Onion
  • Lettuce
  • Homemade Focaccia Bread

Chickpea Salad Sandwich

Ingredients:

  • 200g chickpeas
  • 1/2 cup creamy chickpea mayo
  • 2 tbsp nutritional yeast
  • 1 tsp mustard
  • black salt
  • black pepper
  • 1/4 cup spring onion
  • 2-4 pcs wheat bread

Tofu Katsu Sandwich

Ingredients:

  • 2 blocks pressed tofu
  • 2 tsp mushroom powder
  • salt and pepper
  • for coating:
  • 1/2 cup flour
  • 2 tbsp nutritional yeast
  • salt and pepper
  • 3/4 cup water
  • toasted bread crumbs
  • tonkatsu sauce:
  • 3 tbsp ketchup
  • 1 tbsp vegetarian oyster sauce
  • 3 tbsp low sodium soy sauce

Assemble:

  • bread loaf
  • 1-2 tsp mustard
  • chopped cabbage
  • tonkatsu sauce
  • tofu katsu
