INGREDIENTS

  • Pizza dough
  • Ice tray
  • Mini mozzarella pearls
  • Tomato sauce
  • Basil

METHOD

  1. Sprinkle some flour on top of an ice tray.
  2. Place a sheet of pizza dough over the ice tray and press down with your fingers to sink the dough into the ice cubes.
  3. Add mozzarella pearls, tomato sauce, and basil, and use another piece of dough to close it. Freeze for 30 minutes.
  4. Remove from the ice tray, cut each cube and bake for 15 minutes at 180ºC (356ºF).

For the Pizza Dough:

  • 2 1/4 tsp (1 packet) active dry yeast
  • 1 1/2 cups warm water (110°F/43°C)
  • 1 tsp sugar
  • 3 1/2 cups all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp salt

For the Pizza Cubes:

  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • Your favorite pizza toppings (pepperoni, olives, bell peppers, etc.)
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Marinara sauce or ranch dressing for dipping (optional)

Instructions:

1. Prepare the Pizza Dough:

  • In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  • In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  • Mix until the dough comes together, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-1.5 hours, or until it doubles in size.

2. Prepare the Pizza Cubes:

  • Preheat your oven to 425°F (220°C).
  • Punch down the risen dough and divide it into two equal portions.
  • Roll out each portion into a rectangle on a floured surface, about 1/4 inch thick.
  • Spread pizza sauce evenly over the dough, leaving a small border around the edges.
  • Sprinkle shredded mozzarella cheese and your favorite pizza toppings over the sauce.
  • Roll the dough tightly, starting from one of the longer sides.
  • Slice the rolled dough into 1-inch cubes.

3. Bake the Pizza Cubes:

  • Place the cubes on a baking sheet lined with parchment paper, leaving space between each cube.
  • Mix melted butter, garlic powder, and dried oregano in a bowl. Brush this mixture over the top of the pizza cubes.
  • Sprinkle grated Parmesan cheese over the top.
  • Bake in the preheated oven for 15-20 minutes or until the cubes are golden brown and the cheese is melted.

4. Serve:

  • Allow the pizza cubes to cool slightly before serving.
  • Optionally, serve with marinara sauce or ranch dressing for dipping.
  • Enjoy your delicious and bite-sized pizza cubes!
