In the finale, Andy, Thea and Christopher are given three straight hours to prepare a three-course meal for the judges, and had to serve their appetizer after the first hour, entree after the second, and dessert after the third. For the entree, Andy presented a lobster roll with a compressed choux bun, salt and vinegar chips, and a white wine sabayon, while Christopher made a seared duck breast with a smoked egg, taro nest, beet jus, and celeriac puree, and Thea served a sous vide venison loin with a poblano mole, pepita verde, and pan-roasted Tokyo turnips.
