Almond Cake

Ingredients

  • 7in(18cm)×3in(8cm)loaf pan
  • 80g Egg whites (room temperature)
  • 40g Granulated sugar
  • 25g Honey
  • 35g Vegetable oil
  • 40g Amond flour
  • 30g Cake flour 
  • 2g Baking powder
  • 4g Earl grey tea

Directions

Preparation:

Bring egg whites to room temperature.
Line the cake pan with parchment paper.
Preheat the oven to 356 °F.
①Mix egg white gently so as not to foam until it gets watery.
②Add sugar, honey, and oil, in that order, and mix well.
③Sift cake flour, almond flour and baking powder.
Add Earl grey tea and mix all together.
④Pour the batter into a cake tin, and bake at 356 °F/180℃ for about 22 minutes.
⑤Remove the cake immediately from the cake tin.
Let cool for 30 minutes.
⑥Wrap with plastic wrap
Let rest overnight at room temperature.
⑦Cut into slices the next day.
