Zucchini lasagna

INGREDIENTS

  • 4 zucchini
  • 100g (3/4 cup) of breadcrumbs
  • Olive oil
  • Pepper
  • Salt
  • 100g (1 cup) of parmesan
  • 350g of cheese
  • Basil leaves

METHOD

  1. Cut the zucchini with the potato peeler. Sprinkle the breadcrumbs on the surface of the baking dish.
  2. Start assembling the lasagna by arranging the first layer of zucchini, then pour the olive oil and season with salt and pepper.
  3. Then sprinkle the parmesan cheese and breadcrumbs. Finally, arrange the cheese slices and basil leaves. Repeat the process two more times
  4. Cover the lasagna with one more layer of the zucchini, add a drizzle of olive oil, and season with salt and pepper. Sprinkle with parmesan and breadcrumbs.
  5. Transfer the lasagna to the oven and bake 180°C/360°F for 30 minutes.
