Zucchini lasagna
INGREDIENTS
- 4 zucchini
- 100g (3/4 cup) of breadcrumbs
- Olive oil
- Pepper
- Salt
- 100g (1 cup) of parmesan
- 350g of cheese
- Basil leaves
METHOD
- Cut the zucchini with the potato peeler. Sprinkle the breadcrumbs on the surface of the baking dish.
- Start assembling the lasagna by arranging the first layer of zucchini, then pour the olive oil and season with salt and pepper.
- Then sprinkle the parmesan cheese and breadcrumbs. Finally, arrange the cheese slices and basil leaves. Repeat the process two more times
- Cover the lasagna with one more layer of the zucchini, add a drizzle of olive oil, and season with salt and pepper. Sprinkle with parmesan and breadcrumbs.
- Transfer the lasagna to the oven and bake 180°C/360°F for 30 minutes.
