Baked cauliflower

INGREDIENTS

  • 50ml (¼ cup) olive oil
  • 1 cauliflower
  • 250 g cherry tomatoes
  • 2 tbsp butter
  • ½ onion
  • 80ml (⅓ cup) white wine
  • 3 cloves garlic
  • Salt and pepper
  • Parsley

METHOD

  1. Place a head of cauliflower on a baking tray. Pour a little oil on top of the cauliflower. Add tomatoes, onion, and garlic around the cauliflower.
  2. Pour over melted butter and a little wine.
  3. Add salt, and pepper and bake for 45 minutes at 200ºC (392ºF). Sprinkle with chopped parsley to serve.
