Baked cauliflower

INGREDIENTS
- 50ml (¼ cup) olive oil
- 1 cauliflower
- 250 g cherry tomatoes
- 2 tbsp butter
- ½ onion
- 80ml (⅓ cup) white wine
- 3 cloves garlic
- Salt and pepper
- Parsley
METHOD
- Place a head of cauliflower on a baking tray. Pour a little oil on top of the cauliflower. Add tomatoes, onion, and garlic around the cauliflower.
- Pour over melted butter and a little wine.
- Add salt, and pepper and bake for 45 minutes at 200ºC (392ºF). Sprinkle with chopped parsley to serve.
