Savory potato and mushroom crumble pie
INGREDIENTS
750g (3 pounds) potatoes; 2 eggs; Salt and pepper; 30g (3 tbsp) parmesan; 75g (5 tbsp) all-purpose flour; Breadcrumbs for dusting the pan; 4 sausages; 150g cremini mushrooms; 9 slices of mozzarella.
METHOD
- Boil potatoes with skin on, then peel and pass through the potato masher.
- Combine potato with 2 eggs, salt, pepper, parmesan, and flour.
- Cover a 20 cm baking pan with olive oil and dust with breadcrumbs. Spread ⅔ of the potato mixture on the bottom and the sides of the pan.
- Cook sausages and mushrooms in olive oil for around 10 minutes, or until golden.
- Add sausages into the potato base and top with leftover potato mixture.
- Bake for 30 minutes at 180°C/350°F.
