Savory potato and mushroom crumble pie

INGREDIENTS

750g (3 pounds) potatoes; 2 eggs; Salt and pepper; 30g (3 tbsp) parmesan; 75g (5 tbsp) all-purpose flour; Breadcrumbs for dusting the pan; 4 sausages; 150g cremini mushrooms; 9 slices of mozzarella.

METHOD

  1. Boil potatoes with skin on, then peel and pass through the potato masher.
  2. Combine potato with 2 eggs, salt, pepper, parmesan, and flour.
  3. Cover a 20 cm baking pan with olive oil and dust with breadcrumbs. Spread ⅔ of the potato mixture on the bottom and the sides of the pan.
  4. Cook sausages and mushrooms in olive oil for around 10 minutes, or until golden.
  5. Add sausages into the potato base and top with leftover potato mixture.
  6. Bake for 30 minutes at 180°C/350°F.
