This one pot dinner is ideal for after school, as we’re seeing that shift in weather as the Summer is drawing to a close
Recipe

  • 1 onion
  • Thumb sized piece of ginger
  • 1 tsp coconut oil
  • 1 tsp coriander seeds
  • 2 tsp cumin seeds
  • 1 tsp ground turmeric
  • 150g yellow split peas
  • 150g red lentils
  • 600ml water
  • 400g tin of chopped tomatoes
  • 300ml coconut milk
  • 1 tsp mustard seeds
  • 1 red chilli
  • 1 green chilli
  • 4 cloves of garlic
  • Handful chopped coriander
