This one pot dinner is ideal for after school, as weβre seeing that shift in weather as the Summer is drawing to a close
Recipe
- 1 onion
- Thumb sized piece of ginger
- 1 tsp coconut oil
- 1 tsp coriander seeds
- 2 tsp cumin seeds
- 1 tsp ground turmeric
- 150g yellow split peas
- 150g red lentils
- 600ml water
- 400g tin of chopped tomatoes
- 300ml coconut milk
- 1 tsp mustard seeds
- 1 red chilli
- 1 green chilli
- 4 cloves of garlic
- Handful chopped coriander
