Zucchini bruschetta

INGREDIENTS

  • 2 zucchini
  • 1/2 tsp salt
  • 1/3 tsp black pepper
  • 3 eggs
  • 1/2 tsp salt
  • 1 tbsp cornstarch
  • 1/2 tsp paprika
  • 1/2 tsp basil
  • 2 tbsp sour cream
  • 120g (1 cup) flour
  • tomato chopped
  • 1 tsp minced garlic
  • 50g mozzarella cubes

METHOD

  1. In a bowl add sliced zucchini and sprinkle with salt and pepper. In another bowl mix together eggs with salt, pepper, cornstarch, and sour cream.
  2. Dip zucchini slices into the flour and egg mixture, transfer to the baking pan and bake at 180°C (350°F) for 20 minutes.
  3. Top with tomatoes and cheese, and bake for another 20 minutes.
