Zucchini bruschetta
INGREDIENTS
- 2 zucchini
- 1/2 tsp salt
- 1/3 tsp black pepper
- 3 eggs
- 1/2 tsp salt
- 1 tbsp cornstarch
- 1/2 tsp paprika
- 1/2 tsp basil
- 2 tbsp sour cream
- 120g (1 cup) flour
- tomato chopped
- 1 tsp minced garlic
- 50g mozzarella cubes
METHOD
- In a bowl add sliced zucchini and sprinkle with salt and pepper. In another bowl mix together eggs with salt, pepper, cornstarch, and sour cream.
- Dip zucchini slices into the flour and egg mixture, transfer to the baking pan and bake at 180°C (350°F) for 20 minutes.
- Top with tomatoes and cheese, and bake for another 20 minutes.
